I've had random performance issues when switching to fullscreen. Usually the only way to fix it was returning to the windowed mode, and entering fullscreen again or changing resolution (in the worst case - restarting the game).
Sometimes the game can crash when out of focus.
It keeps opening and closing the on-screen keyboard rapidly, making the whole device unresponsive and forcing user to reboot.
Experience based on native GOG DRM-free version of the game. No external launchers, just game's executable added to library directly as a non-Steam game.
While playing, both the game and Steam crashed frequently. The game itself was running fine (when it was running).

Based on GOG DRM-free version of the game, added to the library as a non-Steam game running with Proton. Performance is great on low graphics settings in DX12 mode. You can even get playable framerates with ray tracing on if you want to (about 30 fps with FSR set to half resolution), but I wouldn't recommend it, unless you really want to drain your battery fast.
I changed sensitivity of pretty much everything, but it's down to the personal preference and I binded in-game shop to the Select button

There are text size options in the game's settings, but still some HUD elements are a little bit too small in my opinion
Based on GOG DRM-free version of the game, added to library as non-Steam game running with Proton. Using "Steam Deck" graphics preset and FSR set to Performance mode I can get up to 60 fps, but usually it's at average of 40 to 50.
I've set fps limit to 50 and TDP limit at 7 watts
Subtitles and other UI elements could be slightly bigger
I play with medium graphics settings and Vulkan renderer. The game runs at stable framerate with no issues. It can run fine in 60 fps, but I play in lower framerate to save battery.

You need to change that one launch option to get matchmaking to work. If you don't do that, the game will show you a message saying that matchmaking is not supported on Steam Deck. Performance-wise it's great on default (medium) settings, although it can drop even to 30 fps when there is a lot of going on on the screen.
I had to edit "FallGuys_client.ini" file in the game directory by changing the first line to "TargetApplicationPath=FallGuys_client_game.exe". Then I copied the "./EasyAntiCheat/easyanticheat_x64.so" file in the game directory to "./FallGuys_client_game_Data/Plugins/x86_64/". I also had "Enable Easy Anti-Cheat" checked in the game config in Lutris.

Make sure you're using at least Proton 8.0 or newer, as there are certain graphical glitches when using Proton 7.0.
Playable on laptop with integrated graphics
I'm impressed how well is this game running on a laptop with Intel HD 620 (well, in 720p and lower, but still)

Game drops frames really hard in a few places (not many, but a few). Sometimes I had to lower my screen's resolution to make it playable again.

Steam Deck is a perfect device for this game. Really fun experience, works perfectly OOTB.
The game crashes in DirectX 11 mode. You have to run it with DirectX 9 to make it work.
You also need to manually set your screen resolution.
By default, on 2160p screen game forces 1440p screen resolution (no matter what your actual is) and 1080p in-game rendering. Changing screen resolution in game menu makes game freeze and crash. To prevent the game from changing your screen resolution you have to go to ~/.local/share/metro_3/some_ID/user.cfg and change "r_fullscreen" value to "off". Now the game should adjust to your native screen resolution every time (I still don't know how to make it run it in window, setting the "r_fullscreen" value to off only prevents it from changing your screen res, it doesn't actually turn the fullscreen off). Additionally to change quality preset you have to change the "r_quality_level" value in the same file, since changing graphics settings also crashes the game (numbers go from 0 to 4, where 0 is lowest quality preset and 4 is "Extreme" quality preset). To turn the ray-tracing on, change "raytrace" from 0 to 1. Changing screen resolution with game config file does nothing.

After a few minutes of playing, the game stops responding to any input and I have to restart it
For some reason, sometimes it comes back to life after clicking buttons rapidly, but after that it also skips a lot of dialogue, so I can't recommend it
I had to manually install Origin in the game prefix

Origin… I mean, the "EA app" sometimes refuses to run or logs me out. You can't play offline at all.

The game works really well, I haven't had any major problems with it.

Game works fine. On Linux you can get a few frames per second more than on Windows.
The game suffers from pretty noticable input lag. I don't know what exactly could be a reason here, but I noticed that this input lag was a little bit worse on the computer with NVIDIA GPU (even with v-sync off), than on the laptop powered by Intel HD Graphics.
Also, in fullscreen mouse clicks are not detected, even if mouse position is shown correctly (in menus you have to use keyboard or gamepad).
Sometimes frames drop in the game menu, but not in the actual game itself, so I wouldn't call it an issue at all.
On the Proton side everything was fine, the only issues I had were the ones caused by poor game servers
You can get used to the input lag eventually and play just fine, but your scores will probably still be worse than in (for example) TETR.IO or Tetris Effect, in which such issue doesn't occur.

Occasional frame drops, not a big deal. This could be an issue with the game itself, not with Proton.
In certain locations the game just crashes and goes back to desktop
In my case, Sea of Thieves works better in DirectX 12 mode (lower framerate in DX11 mode). Sometimes the game crashes, but I don't think this is a problem with Proton, since my friends playing on Windows also experience this. My recommendation is to have the game installed on the SSD instead of HDD, so you can jump back into the game faster, after you get kicked out of the session or after another crash.
Works great out of the box, excellent performance, pretty much no issues
It crashed ONCE during a few hours of gameplay. I'm not sure if this is Proton's fault or the game's fault.
When trying to enter fullscreen, the game would crash, or open in a non-movable off-screen window. It runs fine windowed.
After latest Proton update works perfectly out of the box
Completely borked, crashes at start
I tried with many Proton versions and I've been changing the Windows version within it to 10, 8, 7 and XP. In every case it failed to start.
Game window shows up for a second on full screen, completely black, but after second it crashes and throws me back to the desktop.
On Wayland, it has a windowing issue, solved by using gamescope, but in general it's a great experience

Great performance, no issues at all. Using regular Wine to run it.
I recommend tweaking settings like gyro sensitivity to your own liking

Local multiplayer using 3 Xbox gamepads and a keyboard is a really great experience and I had no issues with this game
I had to install xact via winetricks for the audio to work properly. The game was also set by me to Windows XP compatibility mode.
The game kept crashing when I tried to enter fullscreen.
Although the game itself runs fine, at a stable 60 frames per second, it makes the whole OS unusable. Keeping it running in the background is a very bad idea, gives you terrible desktop performance, and makes it impossible to use any other software in the same time, at least on my hardware.
