Race does not start.
Tried using Proton 5.0-7, 5.6-GE-2 and 4.11-13, combined with all the tweaks mentioned here. The game starts and the main menu appears (with initial stuttering). But if I try to start a race, the game falls back into the menu.
1. protontricks 244210 uninstaller - Uninstall Wine mono.
2. protontricks 244210 winecfg - Remove all preset overrides! There was a bunch of them on my system for a reason I don't know. This explaining my report from yesterday.
3. protontricks 244210 dotnet472 - Install .NET 4.72 framework.
4. protontricks 244210 winecfg - Set system to Windows Vista.
Window is minimizing when exiting a race. Just maximize again. On Ubuntu 20.04 LTS an "application not responding" window shows up sometimes. Just press "wait". Anyway, racing itself works without issues.

No crashes but "program does not respond" messages. Just wait.
Use Proton version 5.0-10 and install dotnet472 using protontricks. Recent Proton version 7.0-1 does not start the game.
Seems to be a really enjoyable game but sound issue makes it unplayable.
In-game sound disappears after restarting from checkpoint and does not come back even after restarting the game.
Needs the nostartupmovies trick to start at all. Crashes occasionally.
Game crashes at startup if a controller is plugged in. Set start options to:
-nojoy
Enjoyable when using a controller instead of wheel. With occasional crashes.
Fanatec Porsche Carrera wheel and pedals are recognized like an ordinary controller, shifters do not work. No realistic feeling at all.
Worked without any problems or tweaks until the new Rockstar Launcher came up, which made the game not to start again.
Downloaded the No_GTAVLauncher.exe here: https://www.gta5-mods.com/tools/no-gtavlauncher. Renamed the PlayGTAV.exe in the game folder to something else, renamed the No_GTAVLauncher.exe to PlayGTAV.exe, started the game on Steam and everything worked again.
The other tweaks linked below did not work on my system. The launcher came up but finally got stuck in every case.
Before the launcher incident, I would have given a Platinum rating.
Launcher problems on my old system. Now, everything works fine, just at the very first start the launcher stucks. Just try again.
Today, borked again.

Using the following graphics settings to play at about 70-100 fps:
Screen resolution: 3440 x 1440 pixels
MSAA: 2x
FXAA: enabled
Post-FX Quality: very high
Grass Quality: high
Shader Quality: high
Shadow Quality: high
VSync: off (otherwise frames never exceed 50 fps)
All other settings to maximum quality.
I adapted barni2000's solution as it didn't exactly work for me. Just to mention but probably not of significance: Just before trying this solution I set my system freshly up with Ubuntu 20.04 LTS, so the system was untouched.
Go through the following steps:
- Install and try to start the game: .NET Framework 3.5 error ("turn on or off")
- Go to terminal and enter: protontricks --gui
- From there, start winecfg and set OS to Windows XP.
- Close winecfg and open uninstaller: Uninstall Wine mono.
- Exit protontricks GUI and try to start the game. .NET Framework 3.5 installer is working now. Wait for install to be finished, it will take some time. The game launcher starts and checks for updates. After that an error appears: "The Launcher cannot query DirectX. [...]"
- Press OK, stop the game and all its processes, maybe even reboot to be sure.
- Go to terminal and enter again: protontricks --gui
- Open uninstaller and install DirectX from game files (game folder/3rd) provided.
- Close uninstaller and open winecfg: Set OS to Windows 7.
- Exit protontricks GUI and try to start the game - the launcher starts!
- Choose whatever game settings you want, but set the renderer to DirectX 11.
- You might get the "Can't get line" error. In that case go to: https://www.pcgamingwiki.com/wiki/L.A._Noire#Crash-to-desktop_on_Windows_8
- Get the two files mentioned and copy them to the game folder (gamefolder/final/pc), overwrite if asked.
- Try to start the game again - Welcome to Los Angeles!
Runs out of the box.
One crash to desktop so far.
Very good performance overall. A screen resolution of 3440 x 1440 pixels, all graphics settings to maximum and vsync off results in 60+ fps. Stuttering and frame drop for exactly one second when entering a new area.

Runs at 100-110 fps with very occasional drops to about 60 fps maybe depending on the level design. Stuttering in the menus and on the main screen. Textures must be set to high, everything else goes on ultra with 3440x1440.
"Unable to launch game, please verify your game data."
Compared folders with the working GTA 5 installation and recognized that entire folders (ie "Red Dead Redemption 2" in user files) are missing. I installed a game copy on a Windows device and copied all files possibly missing or corrupted on Linux. Still, it is not working. (Fun fact: It is not working on Windows either due to graphics driver issues.)
This game is a mess. Don't be proud by working at Rockstar, sorry for you.

No character voices. Fix it with: WINEDLLOVERRIDES="xaudio2_7=n,b" PULSE_LATENCY_MSEC=90 %command%
