Works great over online multiplayer. No bugs or crashes.

The first 2 or 3 games on a map after an update will have a lot of stuttering while shaders are compiling.
After they've all been compiled and cached, the game runs smoothly with great performance.
You can either just let the shaders compile and live with the initial stuttering during those first few games, or use a community shader cache from https://github.com/bcook254/apex-legends-cache

Performance was good after changing the settings a bit.
Changing the launch options lets me enable ray tracing in the graphics settings, but it doesn't work.
The game has loads of minor bugs, but from what I know none of the ones I experienced were Proton-specific.
Achievements are a bit buggy, but this seems to be an issue on all platforms. Works perfectly otherwise.
Unable to play online coop
Online coop unplayable due to frequent crashes.
Have tried various Proton versions (latest, experimental, GE), haven't been able to get online coop working. Both players have EAC disabled. Either I get issues joining a party, crash while loading into a game, or crash after a few minutes of gameplay.
No issues
Had to launch with anticheat enabled to use workshop mods. Online coop still worked with it enabled.
Unfortunately no cloud save support, but I tested briefly on my Steam Deck, also worked there without issue. There's no controller support, but the game is very playable using the trackpad as mouse cursor and on-screen keyboard.
No issues
Can only enable fullscreen after completing the tutorial.
Unfortunately the actual gameplay is capped to 30 FPS (some parts like UI elements are at 60, but not the game itself), which makes it pretty choppy, but that's not a Linux issue, just a bad port.

Any bugs and crashes I had were problems with the game, not Proton. Works perfectly otherwise!

There's a part where your screen is supposed to turn blank (it's obvious when you reach it). Everything else still works though, and you can restart the game and continue.
Not a significant bug, but occasionally after the game closes, it will show a "Fatal error" popup. This doesn't affect save data or gameplay in any way, you can just close it and start the game again.

I was unable to alt-tab back into the game once while I had a menu open. Hasn't happened again.
The native version didn't launch, so I used Proton and it worked perfectly.
Turns out the fix for the native version is fairly simple though. Right-click the game in Steam, choose "Manage > Browse local files", and delete the file bin/libstdc++.so.6

Played through singleplayer campaign with no issues.
I haven't tried the Windows version so I can't compare, but performance was quite good. I was able to run at 144 FPS at 1440p with high/very high settings
