Demo ran to main menu, but crashed after choosing the first level
Tried out proton 5.0-9 and GE 5.8
Ran great on start up. There was a little static when music was playing, but on the next startup of the game it was gone. Otherwise, no crashes or weirdness with over 3 hours of playtime.
Works wonderfully with no tinkering
Could not get this game to run before 6.3-7. Now runs great on high settings. No audio problems, the controller works great and past cloud saves work (from Windows machine).
Ran perfect out of the box. Ran on high settings with spot on Xbox controller inputs.

I encountered a few small bugs, but I think they stem from the demo. Great and easy experience.
I finishes the tutorial with only minor issues (which takes a couple hours if you read everything). I've yet to play any larger sections.
The longer the game runs (1+ hour) the more the audio bugs occur.
Sometimes the game has to be forced to quit.
The longer the game runs minor graphical and audio glitches appear. Restarting the game fixes the issues.
On every startup, the game lags for 5 minutes or more (showing a blank scree), but it always starts up and runs flawlessly after that.
I've played over 100 hours on Linux, and over 200 hours on windows and mac. After the long black screen on startup, it runs like a dream. No bugs in game play. Only the initial startup.
Background music crackled constantly, but muting the music stopped the issue.
Does not run on Proton, but thanks to another review, I was able to run it in Lutris. Download Pinball FX3 through Lutris. Click on the game and edit it's Wine Configuration. In the Library tab add "Xaudio2_7". Now in Lutris, click on the game's gear icon and click on Runner Options and click on show Advanced options. Enable DXVK here, and then choose 1.0.2 version. Game was playable, but had a noticeable split second delay from inputs.
R* Launcher starts up and then throws a warning of can't launch game, verify your game files and crashes.
Occasional random crashes if the game ran for too long (2-3+ hour timeframe).
I've been trying to get this game to run for a long time by using many of the tips here with no luck. With the new proton it now runs well with no tweaks. I've got almost 55 hours in single player with only a handful of crashes and no other issues. Haven't tried multiplayer yet.
If you're having issues and tried to install on earlier versions of proton, try deleting rockstar installer files here: /home/USER/.steam/steam/steamapps/compatdata/1174180

I've played over 10+ hours without problems. One session was over 5+ continuous hours with no issues. Very stable.
