Occasional stuttering
When game is set to fullscreen, it immediately minimizes itself. Activating the window again brings it back fine though
Locks up when game loses focus, and party invites cause the game to minimize. Avoid these scenarios and it plays great
When I received an invite to join a party, the game minimized itself. The game locks up anytime it looses focus and must be restarted. Since it minimized itself, each time I started it after this it would start minimized and could not be launched properly again until I performed a full reinstall
Alt-tabbing will cause the game to freeze completely.
framerates dropped significantly in some areas
Occasionally experienced some kernel softlocks while playing. Did not occur after switching to GE-Proton, though I only switched for the last 5 hours or so of the game.
Only tried playing a couple times. Got into the other player's game and was immediately disconnected. This also happens on Windows though. Unsure if I was ever invaded by an actual player. I have the achievement for it, but I played a bit on Windows for comparison
Tried playing on Windows a bit, and the game also has stability issues there.

Borderless Windowed only took a portion of the screen and resolution was not adjustable. Fullscreen worked fine
Some of the analog axes on my Logitech x56 HOTAS were mapped differently than they were on Windows, requiring me to maintain two sets of keybindings

Some joystick axes are mapped incorrectly. Adjustment to binds required, but work once changed. Logitech X56

EDDiscovery linked in just fine though, even running in a separate prefix as a mono app.
Default Proton failed to launch the game at all. GE-Proton 7-30 worked great though. Got minor video stuttering during opening cutscene, no stuttering in any other cutscene so far. Running great at 120fps @ 1440p on High settings
After initial launch, I closed the game and installed a mod to change the button icons to PS4 controller instead of XBox. The game worked great before and after this change.
When launching in fullscreen, I had a black screen. Alt-tabbing out of the game and back in fixed it each time

Mostly worked out of the box, with only minor issues (except some missing cutscenes)
On a multi-monitor system, game would fullscreen on the left-most monitor, even though it was not set as primary. I have a keyboard shortcut to move windows between monitors, and this worked to move it to my primary monitor (which has the same resolution). Unsure if this would work with a monitor of a different resolution.
Some cutscenes did not play, and instead showed a test pattern for a few seconds (with the audio still playing), before jumping to the next cutscene before the missing one would have finished. This occurred with 4 cutscenes total. 2 of these were cutscenes during ending C/D which worked during endings A/B. Watching them on YouTube indicates that these should have been the same cutscenes, though the game may have installed an update between my playthroughs of the endings.
Inability to properly fullscreen is a big problem
I'm on a multi-monitor system. Fullscreen mode would pick a monitor, then render the game as if it were the size of the full combined resolution of all of my monitors (I could only see part of the menu). Switching to Windowed Fullscreen would cause a borderless window of the resolution specified to render in the center of the bounding box of my monitors (3 monitors with some vertical difference one one of them)
Game ran perfectly. No complaints. I usually play in fullscreen, and only added the report about the wrong monitor for completeness sake
On a multiple monitor system, switching from windowed to fullscreen defaults to left-most monitor, not primary. Requires a game restart to restore to correct monitor. Not actually a big deal, just a minor annoyance if you change between windowed and fullscreen. I only found it because I tested to answer this question.
Switching to full-screen caused the game to crash. Once I started it up again, full-screen worked fine, as long as the game was started in full-screen. Additionally, changing resolution affected the "window", but not the rendered graphics until a restart. Increasing the resolution caused the game to be rendered in the upper-left corner of the screen, which was fixed with a restart. Finally, any Alt-Tab while in full-screen will cause the game to hang, requiring it to be manually killed, and making that monitor unusable in the meantime.
Switching from windowed to fullscreen brought up fullscreen on the leftmost monitor, not the primary monitor. Restarting the game brought it up on the primary monitor again. Linux native games have had similar issues though.
Previous issues encountered due to incompatibility with wine/proton and th e latest AMD GPU drivers. Using kernel drivers and the appropriate mesa packages fixed this
Game only launched correctly the fist time. When I tried playing again today, it fails to launch entirely
I prefer controller for this game, so I won't play it this way, but most might be fine with keyboard controls.
Attempting to launch with default proton results in an executable not found error.
Updating my report, as the instability seems to be resolved. The game plays great now

The latest Proton-GE (and reportedly experimental) fixes the issues with the updated controls that came along in V10
