I fixed it by adding PULSE_LATENCY_MSEC=60 to the game's launch options
I fixed it by adding the option -vulkan to the game's launch options
The game never crashed, not a single freeze and I think that a typical gamer wouldn't tell that the game was running on linux, I had some trouble starting the game first because I was cleaning the wrong data, if you run the game without the right options you have to clean the directory compatdata/1174180 and if our game is installed anywhere else than the default directory you'll have to adapt it in my case it was /media/steam/steamapps/compatdata/1174180/
I also start steam with this option VK_ICD_FILENAMES=/usr/share/vulkan/icd.d/radeon_icd.i686.json:/usr/share/vulkan/icd.d/radeon_icd.x86_64.json
and the I start the game with these options
PROTON_NO_GLSL=1 RADV_PERFTEST=aco PULSE_LATENCY_MSEC=60 WINEDLLOVERRIDES="dxgi=n,b" taskset -c 0-7 %command% -USEALLAVAILABLECORES -cpuLoadRebalancing -ignorepipelinecach -vulkan
