Game fails to start, as an important file is missing from it's base directory.
It appears that Steam packages a configuration file incorrectly, preventing the game from starting. I have no way to fix that issue.
It works, with some major modifications. Be prepared to thinker with it, and to reboot your PC a few times...

The game is broken by default. You need a restoration mod for it to even start up: https://www.moddb.com/mods/jedi-knight-remastered Run the mod's executable, and manually launch the "inject.exe" executable the mod creates to play the game.
I've tested the game with basic wine and winetricks, as well as ProtonGE with protontricks. You should still be able to use your favorite version of Proton with it. Disable Steam Overlay, and switch to X11 if you're on Wayland, as it won't capture your mouse otherwise.
Enable 3D acceleration, as without it, some textures won't load properly, and will appear corrupted. You can do that on the game's settings.
You can't escape the fullscreen, not even by switching to a tty. Good luck if your game freezes, and doesn't quit.
Game controllers don't work, but if you play on M&K, it works flawlessly.
My Xbox controller would have crazy sensitivity levels, and it's axes would drift, reducing gameplay to just watching a pixelated, rotating skybox.
There was some weird button mapping as well, such as the X button accepting menus, instead of the A button. No way to change it, as far as I know.
Does require some thinkering, but it works relatively well after a few major modifications.

Flawless on Proton. It's an old game, but it deserves it's current platinum rating.
The mouse input was extremely sensitive. Turn down the sensitivity in your system's settings, and the game works as normal.
Runs under DosBox. It is an extremely old game, but there are no issues on Linux.

I used multiple mods and changes to files for the game to "run". I used ProtonGE 6.5 as my proton fork, occasionally using basic Wine for some mod executables. Feel free to try Proton 4.11, as some reported having success with that version. I did not.
The UI was messed up. Dialogue boxes did not appear correctly. This problem stemmed from my monitor's aspect ratio.
It's... wonky, to say the least. Sometimes, it won't work, and it'll default to Windowed 4:3, other times, it will fullscreen, but maintain a 4:3 ratio with black bars on the side of the screen. Sometimes, it'll work flawlessly.
It's got a temper. Expect a lot of crashing. If you get the game running, please save often.
It's sad that the game's age made it almost unplayable. With any luck, Aspyr will port it to Linux, like they did with KOTOR II, which works flawlessly.
Some scaling issues, due to the age of the game, but it otherwise works flawlessly.
Fullscreen is not supported on menus, though I suspect that's more of a game problem, rather than a proton problem.
