Ran updates as below. Installed protontricks. Installed game. Ran protontricks. Installed MF (Media Foundation DLL). Downloaded mf_catherine.verb. Ran: protontricks --no-bwrap 893180 mf_catherine.verb.
Game would load but wouldn't start new game. After Protontricks work-around listed below, game will not even load. 2 hours of troubleshooting, no game. Borked!

What I did to make it work:
I installed the Steam, Flatseal, Protonup-Qt and Protontricks Flatpaks from Flathub.
Using Steam flatpak, I installed and tried to run Catherine Classic (in order to generate the requisite directories for the next steps).
Using Protonup-Qt, I downloaded GE-Proton7-43 to the Steam Flatpak runtime.
For Catherine Classic, I changed the default Proton version to GE-Proton7-43 and added the following Launch Options: PROTON_USE_WINED3D=1 gamemoderun %command%
I used Flatseal to change Protontricks permissions to "All System Files"
Run command: echo "alias protontricks='flatpak run com.github.Matoking.protontricks'" >> ~/.bashrc

Run command: protontricks --no-bwrap 893180 --force mf_catherine.verb
Once game started, I disabled V-sync and ran 1600x900 Windowed mode. Game ran flawlessly!
Without the tinkering steps listed, game would load the menu screen and wouldn't start game or play any animations. Side note: I did the following steps after completely uninstalling the game and deleting the Proton folders for the previous installation attempts. Game works flawlessly without any crashes or issues once configured correctly.
I have an Ultra Wide Monitor and game wouldn't load. Just a black screen. Tinkering steps: Set your DESKTOP resolution down to 720p to get the game to load. Once the game loads, change the in game settings to windowed mode. Save and Exit game. Reset your DESKTOP resolution back to regular. The game should load in windowed mode afterwards.
Did all the steps recommended below.
A single player game that is TECHNICALLY playable, if you don't care about not seeing the story. Not a very fun experience. Cannot recommend.
This new steam support is amazing! The game works ootb on steam. No issues.

Tinkering notes: Selection menu loads fine. From the game setup menu, in graphical settings, tried every setting. Tried changing all settings, game would crash every time. Game would not boot into DOSBox. Will update post if I find a work around.

Tinkering tips: In game load menu, select Settings dropdown and change Graphical Settings. Disable fullscreen and choose "surface" from the dropdown menu. Return to the menu and choose 720p from the drop down menu. That is all. Game worked perfect! Even Gold Box Companion worked like a charm.

While I would not play this on Steam Deck mode, it does work for both my Steam Deck in desktop mode and my desktop PC. Tip: When the game selection menu loads, Click the SETTINGS option and change the Graphical settings to a windowed screen at a lower resolution. The Gold Box Companion also works like a charm. This is a GOLD rated game (some minor in-game settings/tinkering).

The screen resolution problem makes playing the game difficult to enjoy. It is playable, but I would not recommend it.
