Text messages like mail and little notifications are quite small, but they are readable enough without zooming into them.
The game isn't truly 16:10, and there is no option to make it fit into 16:10 perfectly without stretching or fitting unless you do CFG file tinkering.
I've played DEATH STRANDING DIRECTOR'S CUT fully from start to finish on the Steam Deck without major slowdown, using medium-high settings with native and later on with DLSS 2 (once it got fixed in one of the patches).
The game runs perfectly on the Steam Deck, played with low settings.

Planetside 2 on performance and DLSS runs good on the Steam Deck, although a bit chaotic.

Done many personal changes to the control scheme to fit my comfort along with Gyro to mouse but once finished was quite a solid experience.
Planetside 2 run quite well on the Steam Deck, the UI fit the 16:10 screen quite well, and I was able to enjoy infantry and vehicle fights using Gyro as support.
The game requires plenty of mouse input for the menus.
The game can get a bit chaotic at times due to the sheer scale of battles, which can get a bit overwhelming on the Steam Deck screen but on smaller scale battles it is quite enjoyable although you will require plenty of control tinkering.
Sea of Thieves, runs **Amazingly** on the Steam Deck.
On Low (Cursed) Shadow settings some Shadows were flickering, raising the quality of the shadows has fixed it.
Sea of Thieves is a game that often requires a long time commitment, the average game session will last you around between 2 hours or 3 based upon what are you doing.
Battery estimate without battery tinkering and 60 refresh rate shown up as around 1 Hour and 50 minutes, which wouldn't be enough unless you have a power bank or charging.
