Didn't need to make any changes. I installed the game and was immediately able to play. No graphical artifacts or any other issues so far.
Ubuntu issue maybe
Wasn't able to get Doom running, regardless of Proton or Wine version. I'm running Pop_os based on Ubuntu 21.10 and it seems like a common issue for Ubuntu users.
Changed left joystick to arrow keys and right joystick to numpad 2,4,6,8. Changed in-game camera setting for down, right, left and up to those numpad keys, allowing me to turn and tilt the camera with the right stick. Changed the bumper buttons to page up and page down, since they work better for changing the camera height.
Sometimes dips down to 30 FPS at 1024x768 but was still playable.
Had to tweak the controls to be more intuitive and convenient, but otherwise runs great.

I've noticed in later levels that the fps gets worse and worse to the point that it's almost unplayable.
Apparently the draw calls are very inefficient which causes the poor performance. I found this comment here with a fix: https://www.gog.com/forum/ground_control_series/any_way_to_improve_the_framerate/post3

Download the ddraw.dll and put it in the Ground Control folder containing the gc.exe. Then add WINEDLLOVERRIDES="ddraw=n,b" %command% to the game's launch options in Steam.
After doing this, the game runs at a constant 60 fps.
Launcher would stay blank white/black until I installed Proton 6.21 GE (7.2 GE didn't work either).
Moved the ability keys from the face buttons to the back grip ones
Can't start any kind of match after suspending and waking back up. Works again if I restart the game.
Surprisingly fun on the Deck
EAC didn't work the first day of launch but the devs must've fixed it because it works now without needing to make any changes.
I'm surprised. This works out of the box with no tinkering needed. Performance is around 30ish fps on low settings.
Everything looks fine except for cutscenes where there is severe texture/model distortion
