You can turn off movies in the setup tool but I wouldn't bother, all that will happen is you'll see a testcard in place of the movie and then the game will move forward to whatever was meant to happen afterwards. I actually prefer this over movies being entirely turned off, because you know a cutscene was meant to appear so you can go on YouTube to check what it was.
The game is generally stable, I've seen a few frameskips during play but nothing too serious and I haven't put a lot of effort into optimizing for performance.
I was expecting it to be much more difficult after I read the earlier reports, but I guess Proton has got better since then.
Thanks to another ProtonDB user who was using ProtonGE-8-3 - this specific version makes the cutscenes work. I tried with a later version (ProtonGE-8-25) and the game is totally broken and doesn't display anything at all.
Tested with default, 7.x, 6.x, 5.x, experimental, GE and TKG
I tried disabling movies and tried multiple Proton versions (default, 7.x, 6.x, 5.x, GE and TKG) but nothing worked. Running the game just gives a black screen, or sometimes even fails to launch and crashes back to Steam.
Did not work with the default Proton or with later versions of GE-Proton, but with GE-Proton 8.3 it works perfectly.
(PSE, not via Proton) Can play tutorials offline, and play online should work if you pre-arrange a partner
Could not find matchmaking partner
I'm referring to Private Server Edition, as all other editions were shut down. The game cannot be launched via Proton at this time, as far as we know (to start with, there is no way to authenticate when not using the unofficial launcher). You have to launch it via the unofficial launcher, which uses Wine rather than Proton. I wrote a more detailed guide on Reddit of how to do this:

It cannot be run in game mode currently, but you can launch it from desktop mode on the Steam Deck (SteamOS).
Unable to customize character, but otherwise worked fine
After trying and failing to customize the character, the game also crashed
Mapped the view button to the tab key. This lets you turn the stats overlay on or off.
Final cutscene did not play
I completed the game with no issues, but after I defeated the final boss, the end cutscene (with the credits and final inches etc) didn't play. Instead it just displayed something like a test card and then went back to the main menu. I watched the scene from a YouTube playthrough instead, but it did take something from my satisfaction of completing the game.
Bound start (options) to escape, to enable opening the menus
The cutscenes don't play using the official Proton (audio works but has a blank screen). But after switching to Proton GE 7-33, everything seems to work fine, and the cutscenes play as normal.
