Experienced a couple of issues, but they don't seem to be Linux-related and are being worked on. I found the game very enjoyable anyway.
Mostly a smooth experience with Proton 5.0-10. Crashed a few times, but the game autosaves so frequently that it wasn't really a problem.
minor lighting issues (areas I walked through went very dark sometimes), don't know if that would happen with Windows as well
I don't know, but the way I've experienced it I wouldn't recommend it unless you think you'd be really, really into the game.

Pretty frequent "fatal error" crashes with lost progress, seemed to increase with longer playtime. Once, pictures seemed to be semi-registered when it crashed, and it was difficult to get replacements to fully register.
Steam Play's own versions started up, but the zoom function that's essential for game progress didn't work.
I used Experimental because I forgot that I'd set it as default some time ago.
Played a while ago, can't remember any issues but I might have played before switching to Mint from Ubuntu
Native build didn't start, Proton 5.0 worked. Issues only when alt+tab'ing out of the game.
Technically playable, but can't save so I lost all my progress when the game crashed. I tried both GE versions mentioned by others here.

Save/Load slots didn't show up in the menu, a symbol indicated it was trying to load
crashes or huge lags when tabbing out of the game (to browser etc.)
It seems to work about as well - or not entirely well - as on Windows. A little buggy, but playable and enjoyable.

My previously reported save issue was the game, not Proton - it's fixed now. Occasional issues with KB/M input have appeared instead (also for Windows users); "Continue" doesn't work, "Load" does.
Can confirm the other report, unfortunately. With the most recent Proton version (5.13-2) it's only black, with 5.0-10 black after logo.

Only got a black rectangle. I might try workarounds or something later.
Got through day 1, interacted with NPC, used items from inventory, saved and loaded, seemed to work nicely.

Game started up in a tiny window, click on maximise resulted in an almost maximised one, slightly out of screen on one side. No fullscreen option. ...Auto-hiding Ubuntu's Dock in Preferences->Appearance gave me a regular maximised window.
There was a cursor, but it didn't really work. Game is keyboard-based though, and IIRC mouse control didn't work under Windows, either.
With regular Steam Play I got stuck after the first in-game day because the video sequences didn't work. No issues with Glorious Eggroll.

Finished one playthrough without noticing any issues apart from the one described below.
Couldn't use keys to move around + mouse to change direction at the same time, but it may not be possible as it's a small indie game.
Seems to work out of the box for me with Proton 5.0, incl. my old cloud save from a Windows system.
Noticed no issues with Proton 5.0, fullscreen and input (mentioned by someone else) were trouble-free for me.
Works fine apart from the issue mentioned; stopped working with Proton 5.13-2, but forcing use of Proton 5.0-10 in Properties fixed things
mouse sensitivity was wayyy up in story mode; this seemed to be fixed when I forced it to boot with Proton 5.0-10
Didn't start with Proton 5.13-2, but seemed to run well with forced 5.0-10. Took a while before the loading screen appeared.
Steam button changed from Play to Cancel, then back to Play. Proton-5.11-GE-3-MF tried to do something for a while, with the same result.
Normal Proton (incl. Experimental) got stuck at video sequences, with GE achievements didn't work. I switched back and forth...

Not sure if this is a Linux issue, but sometimes when I approached signs in the town, the writing stayed blurry.
Worked nicely once I forced use of Proton 5.0-10 and moved the game folder to the right location. Screenshots didn't work, though.
Not really customisation, but I manually copied the folders with save files that an error message said was missing (found them in ...steamuser / Local Settings / Application Data).
I mean, I wouldn't recommend the "game", but it worked.
There wasn't any way to save, though I don't think that was a Linux issue...
Smooth experience with Proton 5.0, apart from those occasional crashes that were mostly covered by the game's autosave.
