The current proton experimental bleeding edge beta has finally fixed the "black ground" texture bug I was experiencing with PBR maps (So basically all the stock maps) up until this point. The game runs nearly as well as on windows, even AI traffic now works without tanking framerate to below 60FPS, if you limit the number of vehicles (I set the limit at 6 personally, but experiment to find what's best for your hardware). All in all a great experience.
Anti-Cheat issues

The game launches fine and menus work fine. Playing the tutorial the game runs butter smooth. However, it's currently not possible to actually join a match. Matchmaking works, however while joining the match I get an error message that reads "Could not connect to network!" and I get dropped back to the main menu.
My best guess is EAC is currently not configured to allow linux players and is intervening.

World textures seem to flicker every so often for first few minutes after opening the game.
This game is not stable on NVIDIA gpu's for some reason. Switching to my AMD iGPU causes low framerates (around 30FPS on medium preset) as expected, but the game is rock solid.
All the crashes described below only happen when I use my nvidia GPU.
Crashes usually happen during loading screens, such as while entering/exiting houses, entering/exiting the festival house, entering/exiting races, fast traveling, and especially while switching between DLC's and the mainland. On top of this, the game can crash during gameplay, but this happens far less frequently than the loading screen crashes. It is possible to play the game somewhat, I have managed to complete a few races against AI, but I don't dare try to play online for fear of the game crashing in the middle of an online match.

Game occasionally exhibits a drop in framerate to about 30FPS (From stable 160FPS) lasting about 2-3 seconds, usually when entering/loading in a new area of the map, however this also happened on windows so seems to be an issue with the game itself.
Raytracing is completely broken, turning it on causes these lagspikes to go from occasional to nearly constant, and the CPU pegs at 100% usage on all cores when these lagspikes occur, leading me to speculate that it's an issue with just-in-time shader compilation or texture streaming. If you stand still for a few seconds the framerate recovers to around 70FPS and the CPU usage drops to a more normal 15%-20%
As long as you keep raytracing off, the game runs very well.
