Had to disable mangohud because it crashes the game (gets stuck on initial epilepsy warning).
As usual, the secondary launcher (Ubisoft Connect) is a pain but at least this one doesn't crash right out. Have to close it manually before I can launch the game again, though.
Doesn't start
Ubisoft Connect appears to work fine. Game launches, freezes immediately: it doesn't even go as far as the usual introductory (publisher logo etc) videos. Tried with Proton 5.0-10, 5.13-6, 6.3-4 and Experimental, same results each time.
UPlay can't find internet, game never even start
Tried with Proton 5, 6, 7, 8 & Experimental. Same result every time: « Connection lost ». But since UPlay requires at least one successful login, the game never launches.
EA Launcher crashes
EA launcher crashes, can't even log in into EA account (not to mention launching the actual game). Tried multiple Proton versions, including experimental, to no avail.

Initially had huge artefacts (banners, horse hair etc were totally out of proportion and took up most of the screen space, rendering the game unplayable), solved by adding VKD3D_DISABLE_EXTENSIONS=VK_EXT_descriptor_buffer
Now only a few very minor artefacts remain (graphical & physics glitches) but nothing preventing from enjoying the game.
Works well on RX 570 @30fps, despite the game requiring at least a RX 5500 XT. Low settings though, obviously.

EA launcher crashes, again
EA launcher crashes, the game doesn't even get the opportunity to start. Refunded, and now avoiding EA games like the plague until they fix their launcher.
Works out of the box
Now that they got rid of the EA launcher (which was buggy and prevented the game from even starting), the game works perfectly.

The game crashes very often when mangohud is limiting the frame rate. Had to comment out mangohud's fps_limit and tweak the game's system.xml (refreshRateDenominator = 2) in order for the game to correctly run at 30 fps (my hardware can't do stable 60 fps, so the game is choppy when fps are not limited).
Not playable.
Game initially started with a black screen. The "800 600 32 0 BaseCMO.cmo" in player.ini solved that, allowing me to view the intro videos in a whopping 640x480 window (the xdotool trick didn't help here). Unfortunately, as soon as I click the mouse the game crashes.
Steam client crashes during shader compilation
Shader compilation takes more than an hour, then the Steam client crashes during the last 5%. Relaunching Steam and the game restarts shader compilation from scratch. Rince & repeat.
