A slight framerate drop, and a bit of artifacting in the display, but stable so far and definitely playable.
PROTON_USE_WINED3D=1 %command%
Flickering/flashing of the screen while in the menu. Might have happened in the game too, but I fixed it by setting the Window mode to exclusive fullscreen
and that fixed it.
Was able to host a co-op story game and invite a second player. We could play together with no issues. Had to play the tutorial separately though.
The cutscene at the end of the tutorial did not work for me. I got a black screen with only audio. Was able to watch on my husband's screen because he was right beside me. I hope this doesn't happen with other cutscenes, but not a deal breaker, I can always find them on Youtube if needed. DirectX11 error (InitializeEngineGraphics failed) on startup was fixed with the custom launch options in my tinker steps.
However online co-op gameplay of the story mode has been working. Great fun.
PROTON_ENABLE_NVAPI=1 %command%
Pop-in of terrain.
Switching focus away from the game window (alt-tab), resulting in the game freezing with a black screen. Had to kill the game and restart it.
Loading screen stuck on a white screen with music playing. Had to switch to proton 7.0 to get it to load.
Played solo in online mode on Ubuntu 20.04. Worked perfectly out of the box. Made it through tutorial to first realm. No issues.

As of this report the game is very very early access and not really any single player content.
Minimizing or switching window crashes the game.
Great experience playing online with a friend on Ubuntu 20.
Game would not boot without switching to older Proton.
PROTON_ENABLE_NVAPI=1 PROTON_SET_GAME_DRIVE=1 %command%
A bit of an awkward install process. I used the 'PROTON_ENABLE_NVAPI=1 PROTON_SET_GAME_DRIVE=1 %command%' launch options right off the bat before even installing based on other reports.
Black screen on install, had to press 'enter'. Game asks you to agree to like 6 different agreements. Installs in multiple steps. At one point it finished installing but didn't launch the game. I had to run the game again for it to actually begin.
Was able to login, create a character and start the beginner area and first couple steps of 'tutorial' area. Will add more details after I play more.

Game doesn't launch without switching to older Pronton version. But then I could launch, view the opening cinematic, and play the first bit of the initial tutorial. Will update this report later when I start multiplayer with friends.
Feels less choppy when forcing DX11.
Kept getting the startup error "A D3D11-compatible GPU (Feature Level 11.0, Shader Model 5.0) is required to run the engine." Resolved with downgrading to Proton version 7.0-6.
