The first time I started with the option to install EAC, then I launched the game normally, I jumped a warning that the game does not respond, but then I could play without any problem.
gamemoderun %command% -vulkan -threads 8
No noticeable issues, basically 'plug-n-play'. Remember to change the number of threads in the boot options to suit your processor. Voice chat and others working on the first try.
Great experience OOTB after waiting to load
Max resolution is 1080p although I play on a 4K screen.
While loading the game I keep getting 'Game is not responding' messages but after finishing loading game runs perfectly fine.
I don't know why but can't bump up resolution higher than 1080p...
Worked flawlessly out of the box.
I haven't had to fiddle with anything and I have a steady ~200 FPS. The only noticeable drop in FPS I've been able to see is on a level that explodes a lot of barrels - in which case it dropped to ~85 FPS. Otherwise, satisfactory experience.

Installed it. Opened it. Played it.
Perfect experience out-of-the box.
Installation via Snap failed, Rockstar launcher did not detect the game... With a .deb everything worked flawlessly.

I am loving the game. However, the first time I installed Steam through Snap and then it was impossible to get Rockstar Launcher to detect the game. In the end I installed the .deb provided by Steam on their website and everything worked first time. I set the boot parameters as indicated by others here.
Works great OOTB, aside from windowing issues.
Once out of full screen, game minimized and would not came back -reboot was necessary.
FPS would drop between chapters to ~5 FPS, then everything perfect. 90-130 FPS with my hardware.
The game works well. Apart from minor artifacts, the main problem is windowing. Once you start the game, if you exit the full screen -or change the settings to borderless window- the game minimizes and it is impossible to see it again. The only way I have found is to close it, and in the 2K launcher settings reset the resolution. After that I could see the game in full screen again.
Flawless experience with FPS ranging from 95 to 144 (capped). Did not encounter any issues related to the game (couldn't launch it due to corrupt Steam Runtime files). After checking files' integrity I could fire it up without issues.
Perfect experience OOTB
Game launcher scream 'Obsolete/Not supported Linux version' and 'CPU governor is not optimized for this game'. Just ignored them and continue anyway. As far as I can tell, the game runs flawlessly. Pretty good experience.
Seamless experience once DX12 is enabled.
Good frame rate, but small stuttering all the time. Once DX12 is enabled in the settings everything runs perfectly.
Without having DX12 enabled, some loaded attacks caused FPS drops.
Without DX12, an average of 80-90 FPS with jerks every now and then. The feeling it gave was not satisfactory... Once DX12 was enabled, 120-130 FPS on average and with a smoothness typical of the native game. DX12 can be enabled in the main menu settings.
Great experience OOTB without tinkering
Nearly constant 120FPS with some dips to about ~90FPS in some graphic intense scenes. Resolution does not go up from 1920x1080, but it seems it was design like that.
Steam overlay does not function.
Game runs perfectly on my system, apart from Steam overlay not working (a bummer if you ask me). Other than that the experience has been flawless: good and consistent frame rate, no stutter or lag detected.
