Works on FreeBSD without any tinkering
Lower FPS than on Arch Linux and occasional stutters
WAYLAND_DISPLAY= %command% -vulkan
Random color squares appear on the top right bezel of the screen when looking at the skybox
Setting to "Fullscreen Windowed" fixed the issue (when using resolution lower than desktop resolution)
Heavy stuttering, despite having a high framerate (>60 fps)
If the aforementioned launch parameters do not solve the crashing, try putting "SDL_VIDEO_DRIVER=x11" there instead.

Poor performance in Windowed and high input delay in Fullscreen.
VAC doesn't allow joining official servers.
Native has some mildly annoying issues, such as the audio setting always defaulting to 5.1. Proton GE and Experimental both experience severe stuttering, which impedes gameplay. Switching to 7.0-1 eliminates all of those problems.
Running the game in Windowed Borderless results in the best experience, while the launch options I have included yield the best performance and "smoothness" of mouse input.

Didn't manage to get the mods working on Proton. However, thanks to this mod (https://modworkshop.net/mod/36557), I was able to get them running on a Native installation.
Certain mods that I found on PCGamingWiki (https://www.pcgamingwiki.com/wiki/Payday_2) managed to improve the performance and eliminate any instability or crashes, making it run better than it did previously under Windows.
Make sure to add the launch options for the mods to work and for the game to not be locked at your monitor's refresh rate.
gamemoderun %command%
Very little tinkering required, performs way better than on Windows (almost double the framerate), and loads into the game much faster (in almost half the time).
Occasional performance issues still occur due to weather, but seem to be present on Windows too.
