The game runs great out of the box but cutscenes don't play and completing an early mission is impossible until mfplat.dll is installed.
Clone https://github.com/z0z0z/mf-install then cd into the cloned folder and run "WINEPREFIX=[path to Steam folder]/steamapps/compatdata/397540/pfx/ ./mf-install.sh" (without quotes). Next clone https://github.com/z0z0z/mf-installcab.git and run "WINEPREFIX=[path to Steam folder]/steamapps/compatdata/397540/pfx/ ./install-mf-64.sh" (no quotes). Now copy mfplat.dll to the Borderlands 3 folder. That's it. Thanks to bradleypariah below for these instructions.

I'm getting 100-120 fps with a couple of slowdowns when there's a lot of enemies, but nothing that makes it unplayable.
In the game folder swap Launcher.exe and BorderlandsGOTY.exe (change Launcher.exe to Launcher.exe.old, change BorderlandsGOTY.exe to Launcher.exe, change Launcher.exe.old to BorlandsGOTY.exe.). Then force the game to run with Proton 4.2. Next, in the game's video settings change the FPS lock to unlimited.

The game is playable, but needs some tweaks in order to be enjoyable.
No audio after the first cut scene. As others have said, you need to change the Windows version to WinXP through winecfg and install xact to fix this.
Heavy flickering of vegetation and some trees have lines that stretch to the horizon (as seen here). This is apparently a problem with DXVK after version 1.4.4. I tried to revert to DXVK 1.4.4, but the game would not start.

Runs great. A little bit of stuttering here and there, but otherwise it's perfect.
Very poor graphics quality even with settings turned up. All of the UI looks nice and sharp, but the game graphics are pixelated and blurry.
The game seems to need some tweaking before it will work properly.
Using a controller seems to be an issue with this game, even on Windows. I checked some forums and some people say that disabling Origin overlay will fix the issue, but the option to disable it is inaccessible due to restricted access mode. Others say opening Origin before steam will make the game detect a controller, but I don't know of a way to do this.
Significant slowdowns during some cutscenes which persist after the cutscene has ended. Also when using the map. Possible memory leak?
The game does not launch with the latest GloriousEggroll version of Proton.
The game opens in DOSBOX and technically runs, but only gets about 10 FPS.
Able to connect to Origin and start the game. Menus work fine but trying to start any game mode causes the game to crash.
Tried with Proton 5.0-9 and latest Glorious Eggroll release.

The game will install and the initial splash screen will show, but it will not launch because of EAC.
