Even if you find a way to get rid of the anti-cheat, which may be possible using Madden Spark (I did not try this), it probably will tell you Wine is not supported.
I was not able to successfully play this game until I tried one last thing:
- Uninstall the Snap version of Steam and install using the .deb on the steam website.
I suspect the Snap version has caused many of my problems launching games, so if you are having trouble launching RDR2, make sure you are NOT using the snap version of Steam which is installed through Ubuntu Software as Steam published by Canonical.
After installing the other version of Steam, it was just a matter of signing in, relinking the existing library locations, and clicking Play on RDR2.
I am currently having problems getting my Dualsense controller recognized by games, but that is not exclusive to this game. Will update when I figure out how to fix that.
Seems to just work flawlessly without any tinkering. I chose Proton Experimental, but it probably works without doing that

Sometimes crashes, but is generally pretty stable
I had to switch to Proton Experimental and opt-in to the "bleeding-edge" beta of it
Even on Low settings, the game can slow down a bit
Playable on Steam Deck
Just switch to Proton Experimental and you are good to go
