Proton had some problems with launching game properly. You need unofficial patch, Lutris, and System Wine 9.1, but it works!
Game was dowloaded from GOG via Lutris
unofficial patch https://github.com/unknownexception/subtitans
Patch Instructions:
Copy & paste d3drm.dll, subtitans.dll and subtitans.ini into your Submarine Titans folder. Open STConfig.exe and select 1280x1024.
Lutris options: Choose game->right click->Configure
*Runner options Wine version: System (9.1) rest of them: default
*System Options Multi-GPU-> Enable NVIDIA Prime Render Offload-> TURN THIS OFF
No cutscenes :(
You need GOG version, Lutris, unofficial patch, but You can play and enjoy :3 Proton had problems with game (stuttering, crashes etc). Maybe someone will make it better, even with working cutscenes :). I'm new to Linux so... But I hope my tinkerink will help someone. Have a nice day while playing this classic <3
Frequent stutters

The unofficial patch (windows) doesn't appear to fix it. The STcofing.exe has issues launching which may provide the solution
I was trying to troubleshoot, but it seems to have worked with "PROTON_LOG" launch option for some reason. Not friendly for typical gamers.
I tried to run this with Proton 6-3-6 and Proton GE latest (6.16-GE-1). First one caused the game to freeze on start with a blank screen, and GE just gave me an "Internal Error" popup with an OK button that closed the game.
Tried to troubleshoot by setting "PROTON_LOG" as a launch option but that somehow seems to have fixed everything and the game starts up (on both Proton versions). Played the White Sharks tutorial and about 5 mins of the first White Sharks mission, seems to be running well but there is some occasional lag.
Occasional lag, not sure if it's because of the game or Proton.
I'm not sure if there's supposed to be any cinematics/FMVs at the start, but the game starts up with a "Mission Status" screen of the last mission I played, and only then lets you go into the main menu.
