Ver. 16.0.2.0 adds Enigma. An invasive antimodding malware introduces poor performance and incompatibility with linux.
The game requires Microsoft Visual C++ Runtime to launch. To install it, download and run Protontricks. Scroll down until you see Payday 3 then click it. Press ok when the next window pops up, it should default to "Select the default wienprefix", then select "Install a Windows DLL or component". Scroll down until you see the package named "vcrun2022", select it, then press ok. It will install the C++ Runtime required by Payday 3 to launch.
On the steam deck, in game mode, it runs around 25 fps when not in an assault. Pretty much the only way you'll get 60 fps is if you stare at the corner of a wall. Running outside the bank is even worse and runs around 15 to 10 fps. Sometimes the fps sutters and drops to around 5 or lower.
Framerate aside, the game ran fine online with no issues (until my teammates disconnected cause I was barely able to do anything cause of my awful framerate.)

Following mali's guide, I got the game to run perfectly. It's as simple as downloading something from steam then copy-pasting the command (I was expecting way worse from a bronze rating.) There are some occasional stutters but I assume that's just the shader cache. I haven't tried multiplayer though, as I intent to just play solo.
No longer works
It launches fine, and it get's to the point where you can log in with origin (or whatever it is) but once it launches the actual game the new anti cheat EA added doesn't allow wine to run the game.
The game would crash after pressing a button on the title screen. Reinstalling the game and also switching to proton experimental fixed that.
No longer boots. It used to, but after I reinstalled steamos, it refuses to boot. Reinstalling doesn't fix it.
